Recipe for quick plińce with speck and mushrooms (Kashubian potato pancakes)

Don’t want to spend precious holiday time cooking, but fancy something authentic and warming after a seaside walk—ideally with mushrooms picked that morning? Plińce with speck and mushrooms are simply a delicious idea!

Ingredients (available at Polo Market or Delikatesy Skorpion):

  • 1 kg potatoes

  • 1 onion

  • 2 tbsp wheat flour

  • 1 egg

  • 200 g smoked bacon (for Kashubian “speck”)

  • Well-washed mushrooms picked during your morning walk

  • Salt and pepper to taste

  • Oil or clarified butter for frying

  • Chopped parsley (optional)

Preparation method:

  1. Dice the bacon finely and fry in a pan until crispy. Set half aside for garnish.

  2. Wash mushrooms well, cut into pieces, and sauté in a pan with a little salt and pepper.

  3. Peel the potatoes and onion, then grate them (if they release a lot of juice, gently pour off some).

  4. Break in the egg; add the flour, half the sautéed bacon bits, and seasonings to the potato mix. Mix thoroughly.

  5. Spoon the batter onto hot fat. Fry on both sides until golden.

  6. Serve the ready plińce hot, generously topped with the remaining crispy bacon bits, sautéed mushrooms, and chopped parsley (optional).
