Pomerania is a vast historical and geographical region of the Polish coast. It primarily includes the areas of the Pomeranian and West Pomeranian voivodeships today, with the Tricity as the main metropolis.

Kashubia is an ethnographically distinct region, with its own language, culture, and of course cuisine. Kashubia surrounds Kartuzy, Kościerzyna, Bytów, Chojnice, Wejherowo, Puck, and the Kashubian Lakeland.

Kashubia is part of Pomerania, like a district in a big city. Therefore, when talking about "Kashubian cuisine," we refer to one of the most distinctive local flavors of Pomeranian cuisine.

What are the differences between Pomeranian and Kashubian cuisine?

We already know that Pomeranian cuisine is a rather broad term. So how to distinguish Pomeranian dishes from Kashubian ones? Pomeranian cuisine features hearty fish dishes, fried and smoked sea fish such as flounder, cod, and herring. Pomeranians also enjoy forest fruits (mushroom soup and game), fermented foods, and potato dishes.

Kashubian cuisine is more distinctive. Sweet and sour flavors reign (Kashubian-style herring), smoked and fermented vegetables, as well as meat and poultry with unique additions like raisins or cream (ferkase or frykase).

The most popular Pomeranian and Kashubian dishes

Absolute Pomeranian lunch hits are fish soup, pan-fried flounder or cod, herring prepared in various ways, lake pike-perch, smoked mackerel, seasonal soups (cucumber soup, mushroom soup), and classic sides like new potatoes, herb butter, salads, and fermented vegetables.

Signature Kashubian dishes include Kashubian-style herring (sweet and sour sauce with onions and tomatoes), szandar (potato pancake), ferkase (poultry in white sauce, often with raisins), ruchanki (yeast pancakes, often with apple), kuch (yeast cake with streusel), zylc (meat aspic), pierogi with groats, cottage cheese or fish, smoked eel, or trout.

Both Pomeranian and Kashubian cuisines are hearty and simple, perfect for a satisfying meal after a walk along the seaside or through the forest, which are plenty in Kashubia and Pomerania.

Kashubian desserts and traditional Kashubian cakes

Every sweet tooth will find room for a traditional Kashubian dessert, even after a filling lunch.

Most frequently tried by tourists, Kashubian ruchanki are yeast pancakes, often with apple. In every Kashubian café, you'll also find kuch, a yeast cake with streusel. It's a classic for afternoon coffee.

Other favorite companions of afternoon breaks are cheesecake made with local cottage cheese and apple pie made from paper apples. Two different but equally welcomed guests at family gatherings and lazy winter afternoons.
